Kelly Slater’s Banana Bread

We believe that one way to improve your diet is to plan your meals and snacks to include fruit. Therefore, we would like to share with you some yummy fruit-based recipes.
Try this healthy, delicious yet very simple banana bread recipe by the world's biggest surfer - Kelly Slater.
Accept this challenge and eat like a Pro!

Ingredients
• ¾ tsp baking soda
• ½ tsp sea salt
• ¾ cup grated almond
• ¼ cup coconut flour
• 2 tbsp coconut oil (or olive oil)
• 3 eggs
• 2 very ripe bananas
• ¼ cup honey (preferably raw/organic)
• ½ cup walnuts (optional)

Method
Preheat over to 175C
Using a whisk or fork, blend the dry ingredients
Combine the wet ingredients (separately) and blend well. If you are using coconut oil, if it has solidified, you'll need to melt it. Very quick to do. It's better to use coconut oil than olive if you can.
Once these are all blended, add to the dry ingredients. This can be done by hand, but make sure they are very well combined.
Oil a loaf tin and add the batter.
Bake for 40mins or until done or until browned and a skewer/toothpick inserted in the middle comes out clean.

You can also make these as muffins, but probably won't take as long to cook through.
Check after about 25mins
