Apple soup

Today we suggest a scrumptious soup rich in energy and vitamin A.

It is a delicious recipe for every occasion! Whether you are hosting a dinner, cooking for your family or looking for an easy portable lunch to bring to work.

We suggest Golden Delicious apples but feel free to try other varieties.

  • 2 tablespoon(s) margarine or butter
  • 1 large onion, coarsely chopped
  • 3 medium Golden Delicious apples
  • 2 pound(s) carrots
  • 2 can(s) (14 1/2 ounces each) chicken broth or vegetable broth
  • 1 tablespoon(s) sugar
  • 1 teaspoon(s) salt
  • 1 teaspoon(s) peeled and grated fresh ginger
  • Half-and-half or heavy cream for garnish
  • Fresh chives for garnish

In a large pot, melt margarine or butter over medium heat. Add onion and cook 12 minutes or until tender and golden, stirring occasionally.

Meanwhile, peel apples and carrots. Cut apples and carrots into 1-inch chunks.

Into onion in large pot, stir apples, carrots, broth, sugar, salt, ginger, and 2 cups water; heat to boiling over high heat. Reduce heat to low; cover and simmer 20 minutes or until carrots are very tender.

Remove the large pot from heat. Use hand blender to puree mixture until very smooth. Serve soup with a swirl of half-and-half and garnish with fresh chives if you like.
