Fresh Fruit Bruschetta

If you are planning a relaxing and light weekend meal with your friends you should try this one! It is a fresh, colorful, fruity snack!


1 whole wheat baguette
1 cup mascarpone cheese
1 tablespoon honey
1/3 cup chopped strawberries
1/4 cup blueberries
1/4 cup chopped mango
1 kiwi, chopped


  1. Preheat oven to 400.
  2. Slice baguette and lay on a wire rack on top of a baking sheet. Toast until golden brown.
  3. In a bowl, combine mascarpone and honey.
  4. Spread a tablespoon on each baguette.
  5. Top with an assortment of chopped fruit.
